Did you have a bounty of lemons from your garden or have lots of lemons at home and don't tend to use them up, or did you buy in bulk at the grocery store at a low cost? There is great news for you and you can freeze the lemon juice for months and use it as needed. This avoids wastage and also saves money.
Preparation
- Clean: Clean the lemons thoroughly well with water to get rid of any dirt. You don't want the lemon juice to get contaminated in any way.
- Grate Zest: If you use lemon zest in baking or other recipes, grate the skin of lemon before cutting it. Freeze it in a separate ziplock bag or container and use it as needed.
- Juice: Cut the lemons into halves and use a citrus juicer or a lemon squeezer to squeeze the juice. If needed, use a strainer to get rid of any seeds or pulp.
Instructions
- Cubes: I like to freeze lemon juice in ice cube trays. This way I can grab a cube or two whenever I need it. Cover the ice cube tray with a cling wrap and place it in the freezer for at least 24 hours.
- Package: Once the lemon juice has frozen into cubes, separate out the cubes and place it into a container or a freezer-safe ziplock bag.
- Label: Label the ingredients of the container or ziplock bag so you know the contents later. I like to label it with "lemon juice", and date.

Storage options
- Zip-lock bags: Airtight zip-lock freezer bags are a great option. Remove as much air as possible after placing the frozen lemon juice cubes in it.
- Container: Airtight containers like Rubbermaid, Tupperware, glass jars, or other silicone reusable containers are a great choice.
Defrost
- Thaw in fridge: Take out as many cubes of lemon juice and place it in a container or a small bowl in the refrigerator overnight or for at least 6-8 hours.
- Quick thaw: Keep the lemon juice frozen cubes in a small bowl and place it in a container or a bowl filled with water. Leave it for about 10-15 minutes.
- Room temperature: Place the lemon juice cubes in a bowl at room temperature for 1-2 hours or until it defrosts.

Usage
Once defrosted, lemon juice can be used in any recipes that calls for it. Lemon juice cubes can be added to water along with other fruits or vegetables like cucumbers to make flavored or infused water. Lemon juice cubes can directly be used to make lemonade.

Frozen lemon juice can be used for a year.
