Active dry yeast, bread machine yeast, and instant yeast can be frozen for months in the freezer and still retain their activity. However, fresh yeast should not be frozen.
How to freeze yeast?
An unopened pack of yeast can be kept in the freezer as is for at least 6 months and still be active when you use it.
When opening a large pack of yeast, transfer some into a small jar and keep it in the fridge for regular use. Place the remaining yeast in an airtight container or freezer-safe bag and remove as much air as possible. Put a label with name and date and place it in the freezer.
